“All I have is eggs, half an onion, some rice from yesterday and a bit of cheese.”
Órale — that's not "all", that's dinner and it's a good one. Fried rice, more or less, and yesterday's rice is better for it than fresh, so you've accidentally done the hard part already. Pan on, hot as it goes, oil in. Onion first, chopped small, until it goes soft and takes a bit of colour — you want to hear it, if it's quiet the pan is cold. Then the rice, and here's the part people get wrong: press it down and leave it alone. Don't stir. Ninety seconds. You're trying to get some of it crispy and stirring is how you end up with warm wet rice. Push it aside, crack the eggs into the space, scramble them there, then mix it all together. Cheese on top, off the heat, lid on for one minute. Salt, and something sour if you have it. Then tell me how it went — and be honest, I can take it.
